With so many apples around this year, try this recipe to use some of them up!

Smoked Mackerel and Apple Pate


  • 2 Mackerel Fillets
  • 1 Large Cooking Apple
  • 1 tablespoon Sugar
  • Black Pepper
  • 1 Dessertspoon Lemon Juice


  • Peel and chop the apple
  • Put into a saucepan with a couple of tablespoons of water and the sugar
  • Heat gently and cook until softened, stirring occasionally
  • Allow to cool
  • Put the skinned mackerel fillets and cooled apples into a processor
  • Add black pepper and lemon juice – you can add more to your taste
  • Whiz it all up and put into a dish

Serve with crackers, tortillas, melba toast, pittas …. Or anything that takes your fancy!
